Ultimate "I'm Allergic To Everything"
Cut-Out Cookies
Ingredients:
--1 box 1-2-3 Gluten Free Lindsay's Lipsmackin' Sugar Cookies Baking Mix
(this is the best one I have found for the right sugar cookie flavor & consistency.)
--2 1/2 Tbsp Ener-G Egg replacer
--3T unsweetened original Almond milk (warmed but not hot)
--2 sticks Fleischmann's Unsalted Margarine (room temperature)
--1/2-3/4 cup Tapioca Flour
--1 tsp Madagascar Vanilla Extract or Almond Extract
--parchment paper
Instructions:
Pre-heat oven to 375 degF.
Mix baking powder into dry baking mix and set aside. 
Place room temp margarine in mixer with paddle attachment and cream until very fluffy ~ 3 mins.  Stop mixer. 
Add 1/2 cup of baking mix. Mix into margarine on lowest setting until just incorporated. Set aside.
Place egg replacer into a Pyrex glass liquid measuring bowl. Add warm almond milk and extract of choice and whip with a whisk (or hand mixer) until no lumps and starts to fluff. Think... beating an egg.
Add egg replacer mixture to mixing bowl. Turn mixer on low-medium until just incorporated.
Add the rest of the baking mix slowly to bowl and mix on low-med, scraping down sides of mixing bowl until it starts to make a dough. Don't over-mix... it will look crumbly at first but will quickly come together to look exactly like a standard cut-out cookie dough.
Cut dough in half and wrap each half in plastic wrap and place in refrigerator for 1 hour.
Prep counter. I use a DoughEZ system to roll out all my doughs. You can use a Silpat or parchment too. Sprinkle work surface lightly, if needed (very lightly) with tapioca flour. Roll out dough (again, using as little tapioca flour as possible to keep it from sticking. The more you use the dryer the cookies will be).
Cut out shapes. 3.25" size cutters or less work seem to work best.
Place on parchment-lined cookie sheet. Bake 4 mins. Turn and rotate sheets. Bake 4-5 more (depending on size of cookie). Cookies should not dimple when lightly pressed, but still be without browning. It's ok if they have a tiny bit of brown but not a lot or they will be hard and dry.
Cool on rack and decorate!!! Blessings!!
